favorite recipe

CinnamonrollDo you ever have those days when you just have to have something? I've been wanting homemade cinnamon rolls for weeks now. I finally decided that today would be the day that I made them since we didn't have to get up early to take Matthew to school. So I made these this morning, ended up having them for lunch since I got a late start on them. They hit the spot....and we have some leftover for breakfast tomorrow.

I thought that I would share this recipe. I got it from my mom (who is a really good cook, btw). We make it all the time for dinner rolls. Once in awhile I do the cinnamon roll variation like today. It couldn't be an easier recipe! I hope you enjoy it. Do you have a favorite recipe? Something that turns out right each time and that your family loves? Please share it!!!! :)

Rolls

1/2 Cup warm water

2 T yeast

4 T sugar

2 tsp salt

Stir the above ingredients and set aside.

Mix the following: 1 cube melted margarine, 1 Cup warm milk (microwave for 30 seconds). Add 2 beaten eggs to this mixture. Make sure the margarine and milk aren't too hot (you don't want to cook the eggs).

Add the yeast mixture and stir. Add 4 cups of flour, stir until sticky. Cover with a clean towel and let rise for 1 hour or double in size. Flour surface and knead just a couple of times (until not too sticky to handle). Roll the dough out to 1/2 inch thick. Cut into circles with a glass and then fold the circle in half. Place on a greased cookie sheet. Let rise 1 hour. Bake at 400F for 10 minutes.

Cinnamon Roll Variation: Roll dough out to 1/4 inch thick. Spread with butter, cinnamon and brown sugar. Roll up and cut into 1 1/2 inch thick slices. Place on greased cookie sheet and let rise for one hour. Bake at 400F for 10 minutes or until cooked. Make a glaze using 1 1/2 Cups powdered sugar, 2 T butter or margarine, 2-3 T milk (depending on how thick you want it) and 1 tsp. vanilla. Mix it all up. Pour over warm rolls. I usually double the amount of glaze - everyone like it.
